This delicious dessert wine is made via the “cane-cut” process; the arms of the vine are cut and detached from the main trunk late in the season when the fruit is already ripe. This causes the bunches of grapes to shrivel and concentrate in both sweetness and flavour intensity. The vines are hand-harvested and the resulting wine is a wonderfully perfumed, sweet drop that has sufficient acidity to prevent it from becoming cloying. It presents aromas of vanilla, lime and apple and flavours that stretch from fresh to ripe citrus and panna cotta.
